Crispy Tallow-Roasted Potatoes
These golden potatoes are crisp on the outside, tender inside, and full of savory flavor.

Serves: 4 Prep time: 10 minutes Cook time: 40–50 minutes

Ingredients

  • 2 pounds Yukon Gold or russet potatoes
  • 3 tablespoons Centennial Cuts Cooking Tallow
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried rosemary or 1 tablespoon chopped fresh rosemary
  • Chopped parsley for serving, optional

Instructions

  1. Preheat the oven to 425°F.
  2. Cut the potatoes into approximately 1-inch pieces. For extra-crispy potatoes, rinse them under cold water and dry them thoroughly.
  3. Place the tallow on a large rimmed baking sheet. Put the sheet in the oven for two to three minutes, just until the tallow melts.
  4. Carefully remove the baking sheet. Add the potatoes, salt, pepper, garlic powder, and rosemary. Toss until every piece is evenly coated.
  5. Arrange the potatoes in a single layer, leaving a little room between the pieces.
  6. Roast for 40–50 minutes, turning the potatoes halfway through. They are ready when the edges are deeply golden and the centers are tender.
  7. Taste, add more salt if desired, and finish with fresh parsley. Serve immediately.
