On Wednesday, January 14th, Centennial Cuts was honored to attend the 2026 Beef & Wine Festival at the National Western Stock Show, hosted at the Witwer Show Arena in the Stockyards Event Center. The evening brought together great food, great people, and a shared appreciation for Colorado agriculture — exactly the kind of gathering we’re proud to be part of.
For Luke Larson, the National Western Stock Show isn’t just an event on the calendar. It’s a memory that spans generations. From showing livestock here as a kid to standing in the arena today alongside his wife Kate and their sons, the Stock Show represents something deeper: family, youth in agriculture, and the vital connection between rural producers and urban communities.
That connection is at the heart of why Centennial Cuts exists — and why events like the Beef & Wine Festival matter so much.
This year, we were proud to serve Colorado-raised beef alongside our friends at Number Thirty Eight, with thoughtfully crafted dishes by chefs Adam Brantz and Richard Lichter. The evening celebrated not just flavor, but the people and stories behind every cut — from the ranch to the plate.
The Stockyard Beef Festival is about more than a great meal. It’s about bringing people together. It’s about sharing where our food comes from and honoring the hardworking families who make it possible. It’s a reminder that agriculture isn’t something distant — it’s living, evolving, and deeply connected to our communities.
