Marinated Skirt Steak Pasta Bowl

A Fresh Tailgating Option

Bring something fresh and bold to your next tailgate. Our Centennial Cuts marinated skirt steak is grilled to perfection and paired with a Mediterranean-inspired pasta salad. It’s hearty, refreshing, and easy to share with friends on game day.

Ingredients (Serves 4–6)
•1 lb Centennial Cuts marinated skirt steak
•1 lb penne or rotini pasta (cooked & cooled)
•1 cup cherry tomatoes, halved
•1 cup cucumber, diced
•½ cup Kalamata olives, sliced
•½ cup roasted red peppers, sliced
•½ cup feta cheese, crumbled
•¼ cup red onion, thinly sliced
•Fresh parsley or dill, chopped
 
Dressing
•3 tbsp olive oil
•2 tbsp red wine vinegar
•1 tsp Dijon mustard
•1 garlic clove, minced
•½ tsp oregano
•Salt & pepper to taste
 
For Serving
•1 cup tzatziki sauce
•Pita wedges or chips
 
 
Instructions
1.Grill the Steak
Fire up your tailgate grill. Cook marinated skirt steak 3–4 minutes per side until medium-rare. Let rest 5 minutes, then slice thinly against the grain.
2.Mix the Pasta Salad (ahead or on-site)
Toss cooled pasta with tomatoes, cucumber, olives, peppers, feta, and onion. Whisk dressing ingredients together and stir into the pasta salad.
3.Build & Serve
Layer pasta salad into cups or bowls. Top with sliced skirt steak, a dollop of tzatziki, and a sprinkle of fresh herbs. Serve with pita wedges for scooping.
